Carol Jean Carstenbrock, 73, of South St. Paul, Minnesota, passed away peacefully, surrounded by her family, on September 19, 2026.
Carol was one of us. She lived with liver disease and was part of the Fatty Liver Foundation family, and her family asked that memorials in her name come to the foundation to support research, education, and help for people affected by MASH. That means more to all of us here than I can say, and we are deeply grateful.
She was the loving wife of Tom for 53 years. She is survived by Tom; her son, Matthew (Natalie); her daughter, Angela (Nick) Henjum; her grandchildren, Jack and Stella; her brother, James (Sharon) Seidl; her sister-in-law, Sharon Seidl; and many nieces, nephews, other family members and friends. She was preceded in death by her parents, Louis and Rose Seidl; her sisters, Darlene Seidl and Mary Ann and John Koehnen; and her brother, Louis Seidl.
Carol devoted much of her life to her family and treasured the time she shared with her children and grandchildren. She loved her summers at the lake and her winters in Florida, enjoyed playing Texas Hold'em with her poker friends, and took great pride in her garden and the beautiful flowers around her home.
To Tom, Matthew, Angela and the whole family, our deepest sympathy. Memorials to the Fatty Liver Foundation in Carol's memory may be made at fattyliverfoundation.org/in_memory_of.
